Amish Funeral Potato Salad

Although the name of this potato salad is a bit macabre, it’s very good! And I never actually had this at a funeral. It was served at the communal Sunday dinners after church all summer long. This is the recipe as given to me and it makes a lot! I halve it to make enough for the family with some leftover. My guess is it would serve about 8-12 as written. As with all the potato salads I make I prepare this the day before to let the flavors blend before serving.

Funeral Potato Salad

Ingredients:

  • 6 medium potatoes, cooked and cooled
  • 6 hardboiled eggs, diced medium
  • 3/4 cup celery, diced medium
  • 1/4 onion, chopped

Dressing Ingredients:

  • 1 1/2 cup mayonnaise
  • 3 tablespoons yellow mustard
  • 2 tablespoons white vinegar
  • 1 1/4 cups sugar
  • Salt to taste
  • 1/4 cup whole milk

Mix all dressing ingredients together and refrigerate for at least an hour to allow flavors to blend. If the dressing is too thick mix in a little bit of extra milk and stir.

Instructions:

  1. Shred the cooled potatoes.

  2. Add the eggs, onion, and celery and mix gently.
  3. Pour dressing onto potato salad and mix gently.

Microgreens

Microgreens are the first true leaves produced from a seedling, often in fewer than 14 days. These greens are young and only reach about 1-3 inches in height. Left to grow, they’ll turn into the full size, mature leafy greens you already know. But you may be eating microgreens without knowing it already. Many restaurants are using them and even commercially packaged salad mixes often have microgreens tucked in. And they’re healthy!

Researchers from the U.S. Department of Agriculture and the University of Maryland found that leaves from microgreens had more nutrients than the mature leaves of the same plants. So why not grow your own microgreens?

Most microgreens include large amounts of vitamins C and E and beta carotene. Of course this varies by plant but an example is that red cabbage microgreens contain the highest amount of vitamin C. In fact, they have 40 times more than mature red cabbage!  Cilantro microgreens contain three times more beta-carotene than mature cilantro. With microgreens, the more colorful the crop the more nutrients it contains.

The difference between microgreens and sprouts is that sprouts are seeds germinated in water until they form roots, a stem, and some underdeveloped leaves. Sunlight and soil are requirements for microgreens. And sprouts take only about 48 hours to form while microgreens will take one to two weeks.

Some of the most popular microgreens are:

  • Arugula
  • Cilantro
  • Basil
  • Kale
  • Endive
  • Radish greens
  • Watercress
  • Cabbage
  • Peas
  • Spinach
  • Beet greens
  • Lettuce

Growing microgreens is easy. You can even grow them indoors in just about any container. Use a Styrofoam cup or the plastic containers you buy fruit like blueberries in or even in the cardboard rolls from paper towels or toilet paper!

Make sure whatever container you use has drainage at the bottom. Fill the container with a seed starting mixture (and I just do them in regular, high-quality potting soil), leaving a bit of room at the top. Sprinkle your seeds in and cover with about 1/4 inch of the soil. Don’t overcrowd the seeds but if they end up close don’t worry. You’ll harvest the microgreens before space becomes an issue. After covering the seeds mist them lightly with water from a spray bottle. Keep the containers in the sun and don’t let the seeds dry out.

Growing microgreens in your garden is even easier. Ensure that the soil is loose and free of weeds. Plant the seeds about 1/4 inch deep. They can be spaced close together since they’ll be harvested while still very small. When you water use a gentle stream so you don’t wash the seeds too deep or wash them away.

Harvest the microgreens when they’re about 1 – 3 inches tall and a second set of leaves has formed. You can just cut the plant off above the soil level leaving the roots in the ground. Then plant more seeds. Microgreens cannot be harvested more than once so you want to keep re-seeding when you harvest for a continuous supply.

Follow these simple steps and you can have fresh, nutritious microgreens all year long!

Flavor Inspired Container Herb Gardens

Some herbs pair so naturally and deliciously with each other that we reach for the combinations automatically. Since we’re trying to achieve certain flavor profiles I thought it might be fun to create flavor inspired container herb gardens.

Try planting these herbs together and everything you need for a certain style of cooking will be right at your fingertips.

  • Mediterranean: Plant Greek oregano, thyme, and a bay laurel tree together. Prune the tree so the branches are a foot or so above the soil. This will allow plenty of light to reach the thyme and oregano. And the tree won’t get more than about 4 feet tall grown in a pot. Give this container plenty of sun and don’t worry too much about watering. These plants are moderately drought-tolerant. In winter, if you live in a cold area, bring the container inside and let the tree go dormant by placing it in a chilly but sunny spot. This combination of herbs is fabulous with grilled fish, seafood stews, and lamb.
  • Mexican, Latin American & Caribbean: Cilantro, marjoram, papalo (also known as summer cilantro and Bolivian coriander), and Cuban oregano are for dishes from Mexico, South and Central America, and the Caribbean. This container should be kept consistently damp. Test by poking your finger about an inch into the soil. Marjoram and Cuban oregano are frost-sensitive so keep this container indoors in the winter. These are, naturally, heat loving plants so keep them very warm.
  • English Garden: English lavender, borage, chamomile, are lemon balm are all part of this versatile herb garden. Flowers and leaves from most of these plants can be used in cooking. This combo prefers a lot of sun and moist soil. Combine sage, parsley, and lemon balm to flavor vegetables and meats. These plants like moist but not wet soil and, the sage especially, prefers full sun. Rosemary is another plant you might want to grow but it should be kept in a separate pot because it’s picky about water. Too much moisture will quickly kill rosemary. Move these containers inside for the winter if you live in northern climes.

 

  • Southeast Asian: Try flatleaf garlic chives, spearmint, lemon basil, and lemon grass for this container. You may even want to try Vietnamese coriander. Keep them in bright sunlight and maintain even moisture. Lemon basil will need to be replaced each season. If your temperatures stay above 10°F you can leave the flatleaf garlic chives and spearmint outdoors but move them inside if your temperatures go really low. Bring the rest inside for the winter. This container may inspire you to make your own spring rolls and curries.

 

 

Amish Macaroni Salad

My husband is still having trouble eating but he came home a few days ago with a container of Amish Macaroni Salad and he loved it. Since it’s one of the things he’s actually enjoyed eating I want to be sure he has it whenever he wants. I’ve haven’t made it for a really long time so I dusted off my recipe and made a batch today. I’m sure he’ll love it!

This macaroni salad is colorful, tasty, and a perfect side dish for all those summer barbeque meals. It’s a bit on the sweet side so feel free to adjust the sugar to suit your taste.

Amish Macaroni Salad

 

Ingredients:

  • 2 cups cooked elbow macaroni, drained and cooled
  • 3 hardboiled eggs, finely diced (reserve a couple of slices for garnish)
  • 1/4 cup red onion, finely diced
  • 1/4 cup celery, finely diced
  • 1/4 cup carrots, finely diced
  • 2 cups Miracle Whip
  • 2 tbs. yellow mustard
  • 1/4 cup sugar   
  • 2 tsp white vinegar
  • 1/4 tsp salt

 

Instructions:

  1. In a large bowl mix together eggs, onion, celery, and bell pepper.
  2. In a small bowl stir together the salad dressing, mustard, sugar, vinegar, salt, and celery seed.
  3. Pour over the vegetables, and stir in macaroni until well blended.
  4. Cover and chill for at least an hour before serving.

Ways To Use Onions You May Not Know

It’s natural to think of onions for their culinary uses. I love onions. My older son’s girlfriend hates them. But she, and you, may change your mind about onions when your read these ways to use onions you may not know.

Chase away caterpillars in the garden. Garden season has begun and cabbages get lots of evil caterpillars that eat them. It’s onions to the rescue! Just peel a couple of medium onions then grate them into a very large bowl. Add 1 gallon of water and let the mixture rest overnight. In the morning, strain the onions out and pour the liquid into a spray bottle. Now you’re ready to battle the caterpillars. Just spray the leaves of the cabbage and other vegetables to make the crawly buggers speed away. To get enough of the onion smell to deter the caterpillars, you may need to spray the plants twice.

Scrub your barbeque grill clean.  Garden season is also barbeque season and grills get really dirty! An easy way to clean your grill is to heat it up and scrub it with a cut onion. Use a long fork to hold the onion to avoid burns.

Take the sting out of a bee sting. While you’re barbequing you may be stung by a bee. Soothe the pain by placing a slice of onion on the sting. Of course, if you have an allergy to bee stings seek medical attention immediately!

Clean rust from your knives.  After you finish cooking on your clean barbeque you may discover some of your knives are rusty. Just stick them into large onions a few times. The knives will begin to shine again after only a few pokes into the onions.

Remove a splinter without the needle. We all hate having to dig splinters out with a needle. Instead of sticking yourself try an onion! Cut a slice 1/4 inch thick and put it over the splinter. To keep the onion in place, wrap the area with a bandage and leave it on overnight. Your skin will shrink and the splinter will come right out. Of course you’ll need to get rid of that onion scent with a good wash.

Refuse to bruise (too much). If you have a minor bruise, press a cut onion on the area and leave it there for about 15 minutes. Allicin, the compound that makes you cry when you cut onions, also stimulates the lymphatic flow in your blood, pushing away the excess blood that is the bruise.

Get rid of the new paint smell. Placing a few slices of onions in a dish with a little water will get rid of paint odor in just a few hours. Once the paint smell has been absorbed, just toss the onions away.

Save scorched clothing. If you have a washable cotton garment that was scorched by the dryer or iron just cut an onion in half and rub it on the scorch mark. After rubbing the onion on the spot let the clothing soak overnight in cold water then launder again.

Save face. If you have an occasion coming up and get a pimple just crush some onion and mix it with water. Apply the mix to the affected area. It will gradually reduce the pimple.

When winter returns don’t scrape frost. You can avoid the need to scrape frost from your car windows next winter by rubbing a half an onion on the windshield the night before a freeze is predicted.

And then Easter comes again. Use onion skins to dye eggs a sienna color. Soak 4 cups of yellow onion skins in 1 quart of hot water to create this dye. If you want lavender colored eggs use blueberries. 4 cups of berries and 1 quart of hot water will make a lovely lavender dye.

Don’t cry over cut onions. The National Onion Associate recommends putting onions in the freezer for 10 – 15 minutes before slicing them. Freezing reduces the fumes that make you tear up.

Ginger Lemon Mini Muffins

My family loves these Ginger Lemon Mini Muffins and the mini size is perfect for my husband. The lemon adds brightness and the heat of the ginger comes through at the end. With a cup of Earl Grey tea, they’re the perfect Sunday morning treat. They can, of course, be made into full size muffins, just increase the baking time to about 12 -15 minutes.

I got 4 dozen mini muffins and I expect about 16 full size muffins would be about right for this recipe.

Ginger Lemon Mini Muffins

Yield: 4 dozen mini muffins

Ingredients:

  • 1 large piece (about 3.5 ounce) unpeeled fresh ginger (you’ll need 3/4 cup very finely minced ginger)
  • 3/4 cup plus 3 Tbs. sugar, divided
  • 3 Tbs. finely grated lemon zest
  • 2 cups all-purpose flour
  • 1/2 tsp. salt
  • 3/4 tsp. baking soda
  • 8 Tbs. (1 stick) unsalted butter, at room temperature + enough very soft to butter muffin cups
  • 2 eggs
  • 1 cup buttermilk

Directions:

  1. Preheat oven to 375ºF.
  2. Butter the muffin cups.
  3. Cut the unpeeled ginger into chunks and, in a food processor with a metal blade, process until it is very finely minced.
  4. In a small saucepan, combine the ginger and1/4 cup of the sugar.
  5. Cook, stirring, until the sugar melts and the mixture is hot; watch this carefully as it only takes a minute or two.
  6. Set aside to cool until tepid.
  7. In a small bowl stir the lemon zest and the 3 Tbs. sugar and let stand for several minutes to blend the flavors.
  8. Add sugar/zest mix to the ginger mixture. Stir and set aside.
  9. In a medium bowl whisk the flour, salt and baking soda to combine. Set aside.
  10. In a large bowl, beat the butter until smooth.
  11. Add the remaining 1/2 cup sugar and beat until blended.
  12. Add the eggs and beat well.
  13. Add the buttermilk and mix until blended.
  14. Add the flour mixture and mix just until blended.
  15. Stir in the ginger-lemon mixture.
  16. Spoon batter into the buttered muffin cups. Fill each cup until nearly full.
  17. Bake until a toothpick inserted into the center of a muffin comes out clean, 9 – 11 minutes.
  18. Cool muffins for 1 minute in the muffin cups then remove to finish cooling.

Massive Frozen Food Recall Triggered by Listeria Risk

Brands including Trader Joe’s, Panda Express, and Walmart’s Great Value are among thousands of products recently recalled by the FDA due to the risk of listeria contamination. The products include frozen vegetables and fruits. According to the Centers for Disease Control and Prevention, the culprit was a large Listeria contamination at a Washington packaging company.

Since April 25, the CDC has noted that seven people, from three different states, have become ill and hospitalized with Listeria after consuming foods from the factory. Two have died, but administrators do note that Listeria was not the primary cause of death.

In a nationwide voluntary recall, all frozen organic and nonorganic fruit and vegetables that have been manufactured or processed at the CRF Frozen Foods’ Pasco location since May 1, 2014 have been affected. Consumers are urged to call the company hotline at 844-483-3866, or visit the FDA website.

  1. All recalled products have a “best by” or “sell by” date between April 26, 2016 and April 26, 2018.
  1. The affected products include: organic and nonorganic broccoli, butternut squash, carrots, cauliflower, corn, edamame, green beans, Italian beans, kale, leeks, lima beans, onions, peas, pepper strips, potatoes, potato medley, root medley, spinach, sweet potatoes, various vegetable medleys, blends, stir-fry packages, blueberries, cherries, cranberries, peaches, raspberries, and strawberries.
  1. Approximately 358 products, sold under 42 different brand names at Costco, Walmart, Safeway, and Trader Joe’s, have been affected.

Listeria infection causes short-term symptoms that include high fever, headaches, muscle aches, abdominal pain, diarrhea, and nausea. It is especially dangerous to newborns, pregnant women, older adults, and those with already compromised immune systems.

Beauty Tips For Women Over 50

Bette Davis once remarked, “Old age is no place for sissies.” She was so right! Getting older, especially in a youth-obsessed society like ours can be rough on women. Everyone expects women to stay young or at least look young until several days after their deaths. If they dug up a woman’s body a month after she died someone would probably make a comment about how she’d let herself go.

I admit I’m not a big “beauty” person. Even when I was young my idea of makeup was a little mascara and some Chapstick®. My husband, whom I suspect may be legally blind, often tells me I’m beautiful so I don’t feel any real pressure to wear makeup and fuss with my hair. I like to think of myself as a kind of “earth mother” type. It’s an excuse not to dye my hair and spend money on beauty products.

But lately I’ve been feeling that I should do something to improve my looks. Sure, I could lose 100 pounds and that would help but other things are so much faster and require less effort. With that in mind I’ve found some tips that may help all of us over 50 ladies.

The simplest ways to improve your looks is simply to get enough sleep, drink plenty of water, exercise, and eat healthy foods. You’ll be surprised at how much your skin and body will perk up at being treated with care.

Don’t think about how you looked 30 years ago. Those days are gone. Focus instead on your current beauty.

  • Whiten your teeth to make your smile look really healthy.
  • Pamper your hands and nails with a good manicure. Brittle cuticles aren’t pretty. Neutral nail color is always flattering and deeper tones look more youthful.
  • For your hair try getting gloss treatments. They’ll keep your hair shiny and lustrous.
  • Don’t wear heavy, floral scents. Go for something clean and fresh with a beachy scent.
  • Don’t be afraid to layer on moisturizer, especially if you’re tired.
  • Try a tinted moisturizer cream to reduce the appearance of wrinkles and brighten the look of your skin. And use more moisturizer and wear more color in the winter than in summer.
  • Skin tone and lip pigment both fade as you age so go for a more vibrant, but sheer, color for your cheeks and brighter shades for your lips.
  • Don’t use dark eye shadow. Use a light color on the lids and a medium taupe in the crease. Use a dark liner at both the upper and lower lash lines. Use enough eyeliner to be visible when your eyes are open. It also helps to raise the arch of your eyebrows.
  • Use cream blushers and blend it upwards and outwards toward your ears. Cover a larger surface than you did when you were a kid. Your cheeks drop as you get older so you want to use blusher to give them a lift. Pale pinks are good for those with grey or very fair hair and peach works best with dark hair and olive complexions.
  • Never test foundation on the back of your hand. This area ages more quickly and if it matches there it won’t be the right color for your face. Try blending a test patch at the back of your jaw and down your neck instead.
  • If you use a bronzer, get one in a matte finish. You don’t want to glitter and shimmer as this looks wrong on older faces. Bronzers can be fabulous on those lighter patches of skin under your eyes. This is a particular problem for those of us who wear glasses.
  • Lips tend to thin as we get older so choose a bright color and a matching lip liner to enlarge and enhance your natural lip line.
  • Accent your eyes by using a good eyeliner and pulling the eyebrow as high as you can. Move the pencil in a tiny circular motion where the lashes meet the lids staying on the outer half of the lids and working the color into the root and base of the lashes. This will add depth and open the look of the eyes. And apply mascara right to the root of the lashes. Use a cotton swab to soften and smudge the edges of eye liner. For an extra zing try using accents which are lash strips about ten lashes long. They’re easy to apply and very natural looking. Use them on the outer corners of your eyes.

Feeling beautiful is wonderful and it’s especially nice when you’re getting a little older. So get out there and do what makes you feel lovely!

Potty Training as a Grandparent

If you had kids who now have kids of their own I assume you potty trained the now adult people. It’s unlikely they went off to their high school proms in diapers. I remember the days of potty-training and, honestly, it wasn’t terribly hard on me or the kids. Even when our grandchildren started coming along and we had them for extended visits the potty issue never put an iota of fear in my heart.

When I was getting ready to potty-train my kids it felt like no big deal. Tiny people came into the world and, eventually, they stopped wearing diapers and started using the potty. I think it was the hubris of the young that made me so confident. After all, I’d been successfully potty-trained as had all of my friends. How tough could it be to pass on the secrets of going in a potty to my babies? It never occurred to me that parents can have trouble training their kids. And, to be honest, the process wasn’t all that difficult. It wasn’t an overnight victory but it wasn’t a battle. And this summer I’ll be doing it again when our out-of-state grand kids come for their visit. Our youngest grandson will be working on the transition from diapers to big boy pants.

At first, when I realized his parents and I would be working on his potty-training together, albeit hundreds of miles apart, I got nervous. I don’t know why. It’s not as if baby boys suddenly have different equipment than they did when my boys were young or even when our older grandson was training. And the end game hasn’t changed. Nevertheless, it made me a bit apprehensive. I think because I did something this time as a grandparent I hadn’t even considered as a parent. I researched the topic. Big mistake.

I had no idea how many websites, books, videos, and off-Broadway musicals have now sprung up around the whole peeing and pooping in the potty thing. There may have been a lot of information available when my kids were tiny but I doubt there was quite as much since there was no internet and even cable television was new. Couple that with the fact that mothers then pretty much got most of their parenting know-how from their own mothers and reading a book on potty-training seemed a little out there.Now parents and grandparents are bombarded with advice from everywhere. And a lot of it is conflicting advice.

There are charts that state when babies will start to stay dry during the night and the timelines are different for boys and girls. Girls are, according to this formula, more precocious than boys when it comes to being able to sleep and hold in urine. This is no doubt nature’s way of training girls to multi-task for when they’re adults and talking on the phone, while cooking, letting the dog outside, and answering a never ending stream of questions from their own 2 year old children. Apparently it takes boys about 6 months longer, per this article, to catch up. As a woman I can say that the time it takes for guys to catch up to what girls know gets longer and longer as the boys grow into men.

There are even “systems: you can purchase that claim to make potty-training quick and easy.  I suppose it’s possible but I tend to suspect that the only quick and easy about potty-training is the money people make on “systems.”

Others claim that the ways women my age used to train their kids are “dangerously outdated.” Dangerous? Do they think we held their little heads under water until they agreed to go in the potty?

Let me go back to when my oldest boy was potty-training. There were two little boys just about his age who were training at the same time. All three of us mothers thought it was time to start. Mostly because our own mothers were asking, “Isn’t it time to start potty-training?” I quickly realized my son had absolutely no idea what those feelings in his abdomen were so he couldn’t even begin to put them together with the idea of going in the potty. I left him in diapers but also left the potty in place. From time to time I’d ask if he wanted to use the potty and he obliged me by sitting on it. Once in a while, purely by chance, he’d actually do something while he was there. We’d have a little celebration when he did. I even had a song I sang when he actually did something on the potty other than look bored and occasionally touch himself. Over time, he started to put two and two together.

Meanwhile, my friends had their boys in big boy pants which back then were bulky items meant to absorb all the accidents that come with training and were actually like putting your child in sponges that would express vast quantities of pee-pee when they sat down. Usually on the couch. They were avidly pursuing the potty-training dream. It was as if they were after gold medals in the potty Olympics. They spent so much time in sitting on the tile floors of their bathrooms cajoling and pleading with their boys to go in the potty they had grout lines etched into their own bottoms.

Eventually all three boys left diapers behind and are now grown men who never wear diapers nor have accidents in their boxers. The difference was that the other two boys spent a lot of time crying on the potty because they didn’t want to be there and their moms spent a lot of time frustrated and, I’m sure, losing confidence.

So, after reading too many articles and viewing too many videos I’ve decided I’m going to use exactly the same method I used in the past. I’m going to have the potty and the Potty Pirate© book ready. I’ll have M&M’s® on hand as rewards. Yes, I’ll bribe him with candy. Live with it. And I’m not going to stress either of us out over training. I know he’s not going to walk down the aisle to get married sporting a tuxedo and a diaper. Of course, by that time, I’ll probably be in a Depends®.
