We eat a lot of chicken. It’s still one of the less expensive proteins but finding ways to make it so it’s not the same old bird over and over can be a challenge. If you’ve been reading this blog for a while you know our youngest son, Pete and his girlfriend Andi live very nearby. And we generally treat both houses as one household. That means if we have something in our cupboards or pantries it’s fair game. And I found something that got me really excited today at their house; Georgia Brothers Pecan Rub. I grabbed the bottle and tonight I’m making Whole Pecan Rub Roasted Chicken.
I’d never heard of Georgia Brothers before so I just had to try this stuff! I love pecans and it’s also got some heat to it.
This is definitely not going to be an ordinary roast chicken. And because the flavor comes from the rub it’s not something I have to fuss over!
Georgia Brothers Pecan Rub is pretty difficult to find. I looked on Amazon, Walmart, and several other sites. I did find it here at a very reasonable price.
To make this roast chicken all I did was rub a little vegetable oil on the chicken skin and sprinkle the Georgia Brothers Pecan Rub over the bird. I didn’t measure it. The shaker top and my eye were all I used.
Then I popped the chicken in the oven that I’d preheated to 350 degrees. It only took an hour and the chicken was perfect!
I served this with two sides that Mr. C loves and can eat without difficulty; corn and fried potatoes. How Southern can it get?
Whole Pecan Rub Roasted Chicken
- 1 whole chicken (4–5 lbs.)
1 – 2 tablespoons vegetable oil (to rub chicken)
Georgia Brothers Pecan Rub
- Preheat oven to 350 degrees
Rinse and pat chicken dry
Rub vegetable oil over entire chicken in a thin coating
Sprinkle Georgia Brothers Pecan Rub over entire chicken
Roast until internal temperature of chicken is 165 degrees
