There are days I need a dinner that’s really fast and easy but I still want something satisfying and delicious. Yesterday was one of those days. Between butchering the duck and the cold, wet weather I was barely able to move most of the day. But I was hungry! So I made my Easy Shrimp Scampi with Butter Wine Lemon Sauce. I had dinner ready in the time it took to cook some linguine and the combination of tender shrimp, garlic, green onions, and that silky sauce were just what we needed!
You can definitely use fresh shrimp but I had some frozen shrimp on hand so there was no need to run to town. All I had to do was run some warm water over them to thaw them!
I sliced a few green onions. Some recipes call for shallots or onions but I love the taste of the green onions and the color it adds to the dish.
Next I minced a large clove of garlic. Garlic and shrimp are wonderful together and garlic has a lot of health benefits so I always have it in my kitchen.
Since I was going to serve this with linguine I put a pot of salted water on to boil. As soon as I added the pasta to the boiling water it was time to make the shrimp scampi. I told you this was easy and it’s really fast to make!
I melted two tablespoons of unsalted butter in a small skillet and added the green onions and garlic. They only need to sauté for a minute. Then I added the thawed shrimp.
Next I poured 1/4 cup of lemon juice, 1/4 cup of white wine, and 2 more tablespoons butter into the pan. I added a little salt and let the sauce reduce just a bit.
I drained the linguine and topped each portion of the pasta with the shrimp scampi and a generous pour of the sauce.
With a green salad it’s a really tasty, filling meal and it’s ready in less than 30 minutes!
Easy Shrimp Scampi with Butter Wine Lemon Sauce
- 1 lb. shrimp, tails left on
- 3 green onions, sliced (white & green parts)
- 1 large clove garlic, minced
- 4 tablespoons unsalted butter, divided
- 1/4 cup lemon juice
- 1/4 cup white wine
- Salt to taste
- Melt 2 tablespoons butter in a skillet.
- Add green onions and garlic and sauté for one minute.
- Add shrimp and sauté just until pink.
- Pour in lemon juice, white wine, and add the remaining 2 tablespoons of butter.
- Simmer until sauce has reduced slightly.
