Lemon Gooey Cookies

Nothing makes me feel more perky than the taste of lemons whether it’s in a savory or sweet dish. It is so refreshing! My family loves it when I make a savory lemon dish for our family dinners but I thought I’d use lemon for dessert with these wonderful Lemon Gooey Cookies.

Anytime I hear the word gooey I can’t help but think of Paula Deen’s Gooey Butter Toffee Cake. This is one of my family’s all-time favorites and these cookies are an over-the-top dessert in their eyes.

These light, airy cookies satisfy my lemon cravings perfectly. The only thing better than just having these cookies is having them after a dinner of Breaded Chicken and Fettuccine with Lemon Cream Sauce!

To make the Lemon Gooey Cookies I start by setting out a stick of butter, an 8 ounce box of cream cheese, and an egg to come to room temperature. My kitchen was chilly today so I let them warm for a little over an hour. It’s far easier to really cream the butter and cream cheese if they’re not ice-cold.

While they’re warming a bit I zest a couple of lemons to get a tablespoon of zest and squeeze 2 tablespoons of juice.

Using the beater on my stand mixer I cream the butter and cream cheese until they’re nice and fluffy.

Then I add the egg, juice, and zest and mix them on low until they’re combined with the butter and cream cheese.

I add about a third of a box of Duncan Hines Lemon Supreme cake mix, mixing to combine it, and then do the same with the next third and the last third of the box.

Next I put the cookie dough in glass bowl, cover it, and put it in the refrigerator for 2 hours.

I preheat the oven to 350 degrees about 10 minutes before I pull the dough out of the refrigerator.

When the two hours is up I roll the dough into 1 inch balls and roll through a cup of powdered sugar.

Once the cookies have been rolled in the powdered sugar I just place them on a baking sheet lined with parchment paper and bake them for 12 minutes.

I put the baking sheet on a rack to cool for 2 minutes then move the cookies right on to the cooling rack and let them cool completely. This is the part that’s a bit hard for me. I have to not eat the cookies right off the cooling rack!

After the cookies have completely cooled I dust them with a bit more powdered sugar.

Lemon Gooey Cookies

Lemon Gooey Cookies are airy, lemony, and sweet!

Ingredients

  • 1 stick butter room temperature
  • 1 eight ounce box of cream cheese room temperature
  • 1 egg
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 box lemon cake mix
  • 3/4 cup powdered sugar + more for dusting the cookies

Instructions

  1. Cream the butter and cream cheese with mixer.
  2. Add egg, lemon juice and lemon zest; mix until combined on low.
  3. Add the lemon cake mix in three parts mixing until combined after each part.
  4. Refrigerate dough for 2 hours.
  5. Roll into 1 inch balls and roll through the powdered sugar.
  6. Place on cookie sheets covered with parchment paper.
  7. Bake 12 minutes at 350 degrees.
  8. Cool for two minutes and remove to cookie cooling racks.
  9. When fully cool dust with more powdered sugar.

Notes

If dough starts to get soft while rolling the balls divide the dough and return some to the refrigerator until you're ready to roll it.

      Thank you. I’m trying to stay away from them but their tiny, lemony voices keep calling out to me.
