A while back Pete brought us a chicken pizza with Alfredo sauce. I expected not to like it but I did. Chicken in Sun Dried Tomato Alfredo Sauce is a way to get those same flavors in a delicious, easy to prepare meal!

We’re still trying to determine the source of pain in my tummy. And I’ve been avoiding being upright so we’ve been mostly living on frozen pizza and takeout. I know I don’t like it and, although Mr. C has said he doesn’t mind I can tell he’s longing for some home-cooked food. Chicken in Sun Dried Tomato Alfredo Sauce is perfect for my foray back into the kitchen. It’s super easy to put together and it’s absolutely delicious!

Since the recipe uses Alfredo sauce and julienned sun dried tomatoes from jars most of the work is done for me. While I do have to brown the chicken it doesn’t take long. And slicing up the red pepper takes about a minute.

Here’s how to make Chicken in Sun Dried Tomato Alfredo Sauce!

You start by preheating the oven to 350 degrees.

Then melt a tablespoon of butter in a large, non-stick skillet. Add the chicken and brown it for about 5 minutes.

While the chicken is browning pour a jar of Roasted Garlic Alfredo sauce (I like Newman’s Own) into a medium bowl.

Drain a jar of julienned sun dried tomatoes.

Next you cut about a half a red pepper in strips. Add the sun dried tomatoes to the Alfredo sauce along with the julienned red pepper. Add some Parmesan cheese and Italian seasoning.

Mix the Alfredo and other ingredients until they’re well combined.

By this time your chicken should be nicely browned. Put it in an oven safe casserole dish.

Pour the Alfredo sauce over the chicken and pop it in the oven. It should only take about 30 – 35 minutes to cook through. The chicken should be 160 degrees when you take it out.

Meanwhile boil a pot of salted water and add fettuccine. Cook until al dente (about 11 minutes). Drain and keep hot.

When the chicken comes out of the oven let it rest for about 5 minutes. The internal temperature must be at least 165 degrees.

Serve the chicken and sauce over the fettuccine.

Chicken in Sun dried Tomato Alfredo Sauce is delicious and really easy to prepare since it uses Alfredo sauce from a jar.

Ingredients

  • 1 tablespoon butter
  • 4 chicken thighs (bone in, skin on or boneless, skinless thighs or 2 chicken breasts)
  • 1/2 (15 oz.) jar Alfredo with roasted garlic pasta sauce
  • 1/2 (7 oz.) jar sun dried tomato strips, cut into thin strips (about 1/4 cup)
  • 1/4 cup red pepper, cut into thin strips
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning

Instructions

  1. In a large, nonstick skillet, melt butter over medium-high heat.
  2. Add chicken thighs, skin side down and cook until browned (about 5 minutes).
  3. While chicken is browning mix Alfredo sauce, sun dried tomatoes, Parmesan cheese and Italian seasoning in a medium bowl until well combined.
  4. Place chicken thighs in an oven-proof casserole dish.
  5. Pour sauce over chicken.
  6. Bake for 40 minutes or until chicken is 165 degrees in the thickest part of the thigh, not touching bone.
  7. Serve over fettuccine.
