Asparagus used to be a spring only treat but now asparagus is available in most places year round. And I’m not talking about that awful canned asparagus. This is the asparagus you get in the produce section, not the canned or even frozen aisles! I love the stuff and last night I made simple roasted asparagus.
Simple Roasted Asparagus is just that…simple!
I love this side dish because it’s so easy to make and it roasts in almost no time at all. It’s also easy to make just enough for Mr. Comfortable and me or enough for a crowd. Since the seasonings aren’t really measured except to your personal taste, you don’t even need to pull out measuring spoons!
The first thing you need to do is preheat the oven to 425 degrees and set a baking sheet out.
Then wash your asparagus and snap off the tough ends. A lot of people cut the ends off but I’ve learned that asparagus is a wise vegetable. It knows exactly where it should be snapped. All you do is hold the tip end on the stalk in one hand and the thick end in the other. Then bend the stalk and it will break at just the right spot leaving you with tender stalks.
Next put your asparagus in a bowl large enough to fit the entire stalks without breaking them (again). Drizzle a little olive oil over the spears. You just want enough oil to coat them lightly.
Finally season them with some sea salt, pepper, and a little garlic powder. Some folks use minced garlic and I do sometimes, too but last night I took the easy way out and used the powder. And I feel that using garlic powder ensures a more even distribution of the garlic flavor.
Spread the asparagus on a baking sheet and put it in the oven. I only made about 1/4 pound so it took about 12 minutes. If you’re making a pound or more figure on 15 – 20 minutes in the oven. About halfway through I give the asparagus a little toss so they get that wonderful roasted browning all over.
Before you know it you have delicious, fresh Simple Roasted Asparagus!
I served my Simple Roasted Asparagus with a super simple chuck roast with gravy and mashed potatoes. It was a taste of spring in the dog days of August!

- 1 pound fresh asparagus, washed and tough ends removed
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon garlic powder (or 2 cloves garlic, minced)
- Preheat oven to 425 degrees.
- Place asparagus spears in a large bowl.
- Drizzle with olive oil and toss to coat.
- Sprinkle sea salt, pepper, and garlic powder over all.
- Roast for 15 - 20 minutes (until spears are tender).
