A while ago I saw the recipe for a three berry dump cake on Pinterest. It looked good but I’m not a huge fan of blackberries or raspberries and I had blueberries and strawberries in the freezer so I decided to make Two Berry Cream Cheese Cake. It was easy enough for the day I had Sunday and it was for a kind of special occasion. Mr. C and I were having dinner with a young man who robbed me at gunpoint!
I made Two Berry Cream Cheese Cake to take to dinner at that special young man’s home.
I wrote about this man who, many years ago robbed me and Pete at gunpoint. When I originally wrote about the young man I gave him the pseudonym “Kevin.” I kept track of how he was doing over the years and, when he was released we made plans to have lunch. Unfortunately his parole officer didn’t want that to happen until after Kevin was off parole. So we waited. And now Kevin is done with all of that.
After waiting so long to meet again under much better circumstances, Kevin and his fiancé, whom I’ll call Jan, invited Mr. Comfortable and me to dinner at their home. I realize it probably sounds strange that we went but he’s actually a very nice young man. He simply had a very bad friend and made a very bad decision when he was just 17 years old.
I can’t imagine going to dinner at someone’s house without taking something! And Two Berry Cream Cheese Cake is easy enough for me to make even on a day like the one I had Sunday. I’ve been weeding the flower beds and doing things around the house and I’m pretty low on spoons. It was great that I didn’t have to make dinner and Kevin told us Jan is a good cook. Yay!
This recipe is really great because you don’t even have to thaw the berries or soften the cream cheese! It takes about an hour to bake but it’s not like you have to stand by the oven. Go put your feet up and read a book!
Wait! First we need to make the Two Berry Cream Cheese Cake.
You only need six ingredients to make this simple but delicious cake!
Preheat the oven to 350 degrees F.
Put the frozen berries in a large bowl. Sprinkle 1/4 cup of sugar over them, gently tossing them to coat them with the sugar.
Spread the coated berries in the bottom of a 9 x 13 inch baking pan.
Cut up an 8 oz. package of cream cheese into 1/2 inch cubes.
Place the cream cheese cubes over the berries spreading them around as evenly as you can.
Then sprinkle a box of Betty Crocker™ SuperMoist™ yellow cake mix over the cream cheese. Yep. Just sprinkle the dry cake mix over the cream cheese. I told you this was easy!
Melt 3/4 cup of unsalted butter and drizzle it over the cake mix. Cover as much of the cake mix as possible with the butter.
I liked using a ladle to pour the butter.
*I learned that it’s better if you kind of push the high points of the cake down before you pour the butter. If you don’t you’ll end up with some spots of cake mix and cream cheese where the butter runs right off.
Then pop it in the preheated oven for 50 – 60 minutes. The top of the cake should be light golden brown and the edges should be bubbling when it’s done.
Put the baking pan on a rack to cool then sprinkle with powdered sugar.
* I also discovered it’s much better to let the cake cool completely before sprinkling the powdered sugar. The original directions stated: Cool cake for 10 minutes. But I found the powdered sugar melts as the cake is still too hot then.
Serve Two Berry Cream Cheese Cake warm or let it cool and serve with vanilla ice cream!
This is Rebel. Kevin’s 6 month old pup. Rebel and I are in love. He nibbled my nose and clearly wanted to go home with me. I’ll probably steal Rebel in the next few days. It’s okay. If Kevin wants him back he knows where I live.
Kevin’s face as I described the Two Berry Cream Cheese Cake was perfect!
It’s a little blurry but this is Kevin and me!
