I was so happy with the flavors of Aunt Millie’s Hungarian Goulash that I decided to try some of the flavors to make green beans special. Mr. C and I both gobbled up Paprika Green Beans and I’ll be making these green beans again!
My parents had a very close group of friends and I grew up thinking they were relatives. It was Aunt Penny & Uncle Reggie, Aunt Wanda & Uncle Bill, Aunt Millie & Uncle Dave… I was shocked to learn that they weren’t actually aunts and uncles. But they were loved as much as any blood relative and they taught me so much. One thing I learned was how to make Aunt Millie’s Hungarian Goulash!
I was feeling a little adventurous last night while thinking about what to make for dinner. When I mentioned my idea to Mr. Comfortable he was a bit uncertain. He loves the ingredients but he was unsure about combining them. But I’m happy to report he loved the Cheesy Asparagus Stuffed Chicken Rolls!
Not long ago I posted a recipe for my Cheddar Lake Biscuits. I’ve been making them forever and I was quite sure I’d come up with the recipe myself. But a couple of days ago I pulled out a box of Bisquick™ and noticed a recipe for Cheddar Bay Biscuits on the back of the box. So now it’s time for the confession of an inadvertent recipe thief.
Since Andi brought me that big bag of asparagus I can’t stop thinking about it. I made Simple Roasted Asparagus the other day but I had asparagus left and still wanted more! Just to jazz things up I listened to a suggestion Margaret from Soul Food 101 and made Parmesan Lemon Roasted Asparagus.
After making homemade croutons a few days ago I had a hankering for another salad topper we enjoy. Mr. Comfortable picked up a bag of dried cranberry & candied pecans a while back. We loved them. In fact I loved them not just on salads. I snacked on them until they were gone. Oops. So I made a big batch of homemade Dried Cranberry & Candied Pecans. Now there’s enough for salads and snacks!
Asparagus used to be a spring only treat but now asparagus is available in most places year round. And I’m not talking about that awful canned asparagus. This is the asparagus you get in the produce section, not the canned or even frozen aisles! I love the stuff and last night I made simple roasted asparagus.
Braising is an underused way to cook in my opinion. When you braise meats they slowly take on the flavor of the braising liquid without losing their own unique flavor. And the liquid is infused with the flavor of the meat. It’s a win-win! Braised Chicken Thighs Italiano is one of our favorite ways to have chicken thighs because the flavors combine and create something wonderful!
I’ve been keeping busy for the last few days with projects outside of the kitchen. While it’s been kind of nice not to have to devote a lot of time to cooking I miss the meals. So last night I decided to pull my apron back on and make Shrimp & Mushrooms in Lemon Garlic Cream Sauce. It’s a delicious meal full of hearty flavors that will satisfy any “real meal” cravings!
My kids tease me that most of my recipes start with “Soften 12 pounds of butter and 8 pounds of cream cheese.” It’s true that I don’t do a lot of super low-calorie cooking. In my defense I’m still trying to put weight on Mr. Comfortable so gravy as a beverage is still on the menu! But my Creamy Chicken Roasted Red Pepper Rotini has just enough creamy sauce to make it delicious without being too heavy!
