Chicken Milanesa

Chicken and citrus are great together! I love the way those flavors complement each other. Like Mr. Comfortable and me, they bring out the best in each other! The Panamanian way I make Chicken Milanesa, with its crispy coating and lime flavor is a terrific chicken dish. I incorporate lime juice right into the dish rather than simply serving it with lime slices.
Chicken Milanesa is popular all over the world!

Mama’s Guinness Irish Stew

In 1725 Arthur Guinness was born in County Kildare, Ireland. With £100 he inherited from his godfather Arthur started a small ale brewery in 1752. And in 1759 he moved to Dublin and signed a 9,000 year lease on a rather dilapidated and ill-equipped brewery. I’m so glad he did because 258 years later I can make Mama’s Guinness Irish Stew!

Cowboy Skillet Meal

Recipes that are delicious, inexpensive, and don’t create a sink full of dishes are high up on my list of “must makes.” Cowboy Skillet Meal is one of those meals. Everything, including the noodles cooks in one skillet! And if you have leftovers it’s even better the second day!

Pan-seared Delmonico Steak

We don’t have steak very often. But when I get my hands on a thick steak I’m in red meat heaven! I don’t like to mask the flavor of the meat with a lot of seasoning. When Mr. C got a really thick Delmonico steak I just had to prepare it simply! I made Pan-seared Delmonico Steak and the result was wonderful!

Although we’re not Italian we know that Italian food is real comfort food. There’s something about pasta, tomatoes, and garlic that warms the soul. And who doesn’t love mozzarella cheese? Skillet Italian Chicken & Pasta hits all the Italian food notes and, even better, it makes clean up after dinner a breeze!

Mennonite Salisbury Steak

When we lived in Illinois we attended a church that was an off-shoot of the Mennonites. Every Sunday there was a community meal served after the service. It was there that I collected so many wonderful recipes from the Mennonites and also from the Amish folk. Mennonite Salisbury Steak is a simple, comforting meal you’ll love.

Skillet Garlic Parmesan Broccoli

I feel just terrible. This summer I’ve almost entirely ignored broccoli in my cooking. It’s really strange because, even as a kid, broccoli has always been one of my favorite vegetables. I keep expecting to get a sad email from a head of broccoli asking why we broke up. Before that happens I’m making Skillet Garlic Parmesan Broccoli. I hate sad emails, especially from vegetables I love.

Sheet Pan Shrimp & Vegetables

Shrimp is something at least most of my family will still eat. So when I was trying to come up with a meal for our family dinner I decided the safest and tastiest bet was Sheet Pan Shrimp & Vegetables. Everyone except Jami and John eats shrimp! And everyone likes vegetables. Well, Estrella has no choice about eating them but the rest of us like them!

Spicy Sweet Chicken Thighs with Dijon Sauce

We’re at that time of year when the weather is still summery but you know cold weather is just around the corner. It makes me long for June when summer was still stretched out in front of me. I saw a recipe and it reminded me of long, hot summer days. I decided to make Spicy Sweet Chicken Thighs with Dijon Sauce and see how we liked them. I’ve promised to be honest about what I cook and this is one of those meals! It was so disappointing!
