Mama’s Guinness Irish Stew

In 1725 Arthur Guinness was born in County Kildare, Ireland. With £100 he inherited from his godfather Arthur started a small ale brewery in 1752. And in 1759 he moved to Dublin and signed a 9,000 year lease on a rather dilapidated and ill-equipped brewery. I’m so glad he did because 258 years later I can make Mama’s Guinness Irish Stew!

Aunt Millie’s Hungarian Goulash

My parents had a very close group of friends and I grew up thinking they were relatives. It was Aunt Penny & Uncle Reggie, Aunt Wanda & Uncle Bill, Aunt Millie & Uncle Dave… I was shocked to learn that they weren’t actually aunts and uncles. But they were loved as much as any blood relative and they taught me so much. One thing I learned was how to make Aunt Millie’s Hungarian Goulash!

Beef Stew

Our weird winter weather continued last week with temperatures above normal. Then came the power outage and by Saturday morning the lows were ridiculously low. I’d refused to come out from beneath the blankets while we had no electricity and, therefore, no heat but once the power returned I was really craving a good homemade meal. And, since it was seasonally cold (freezing) it was the perfect night for beef stew!

10 Freezer Meals to Make This Weekend

The last couple of weeks have been really rough on my physically. I think the weather played a large part since it was in the 60’s one day then the 30’s the next and continued to roller-coaster that way. I’ve also had a flare of the CRPS which scares the heck out of me. And the worst part was that I felt so awful I didn’t want to cook and we ate take-out twice! I finally decided I needed to restock my freezer meals and I thought I’d share what I made with 10 Freezer Meals to Make This Weekend.

Since Mr. Comfortable and I have been on a spicy food kick lately I decided to make Kicked Up Chicken Fried Steak to satisfy both the comfort food and spicy food cravings!

Steak Sandwiches with Red Onion Jam

Have you ever tried two recipes and loved them both? That’s what happened when I saw a recipe for a steak marinade on All Recipes and thought of a recipe I’ve used for years from Brian Boitano when he was on Food Network. I had a 1 pound rib eye steak, some mini French bread buns, and a hankering for something really savory yet with a touch of sweetness. So I made Steak Sandwiches with Red Onion Jam!
