Sweet peppers, earthy mushrooms, tangy cheddar, and juicy chicken make this casserole a truly satisfying meal. The creamy sauce and crunchy panko topping are added delights. And in this harvest season Farmer’s Chicken Casserole allows you to use all the great produce available at the grocery store, the farmers market, or even your own backyard!
Every year I make a solemn promise to myself that the next year I will not plant an excessive number of zucchini plants. Then, the very next year, I plant an absolutely silly number of plants for two people. Our son and his girlfriend don’t eat zucchini and trying to give them away in this rural area is like trying to sell sand at the beach. I’ve gotten pretty creative with how to use all the zucchini I produce and, since I also grow tomatoes and potatoes, my Garden Vegetable Casserole is a great way to enjoy our fresh from the garden goodies.
Summer barbecues are one of my favorite things and we pretty much all love a good cheeseburger. But the weather here has been extremely hot and the humidity is, in a word, ridiculous. The idea of standing over a flaming grill isn’t really appealing right now. So, to get the flavors without the heat I made Southwest Cheeseburger Casserole. It’s full of good old American flavors that we all enjoy, without all that standing outside in the 97° heat.
