Keep Rice from Getting Sticky

There are certain recipes that you may want sticky rice. Asian fare usually demands it. If you’re eating with chopsticks (or should be) you need to have nice, sticky rice. But there are times that having rice turn out sticky is the last thing you want! I’ve struggled with ending up with sticky, clumped up rice all my adult life. Yeah, it’s not the biggest problem in the world but it can be really frustrating! But happy days are here! I’ve learned the trick to keep rice from getting sticky!

A little over 30 years ago I came up with this recipe and its name for two reasons. Pete had decided he hated vegetables, after months of eating real (not baby food) veggies. I had to come up with a way to get him to eat some vegetable and he had begun toddling around the house singing “Give Peace a Chance” except he sang peas instead of peace. Thus, Give Peas a Chance was born!

Green Beans Amandine

I grow a lot of green beans in my garden each summer. I probably grow more than I should. But I love green beans and I like to be sure I’ll have enough of them in the freezer to last until the next season’s crop comes in. And I give a lot away because everyone should have homegrown green beans all winter! But, as much as I love them, green beans can get pretty humdrum. One of the ways I make them a bit more special is by making Green Beans Amandine.

My family is a meat and potatoes kind of bunch so I make several different kinds of Au Gratin potatoes. I think my personal favorite is my Creamy Potatoes Au Gratin because it’s so cheesy! The sauce is velvety and thick and it coats every bite of the potatoes. Just thinking about it nearly makes me weak in the knees!
