Green Beans with Caramelized Red Onions

If you’re looking for a different way to serve green beans this dish is a wonderful change from just plain old green beans with butter. Sweet and spicy red onions paired with tender green beans are a tasty side dish. Add some balsamic vinegar and brown sugar and yum! Even if they’re not vegetable lovers green beans with caramelized red onions will have your family asking for seconds!

I love green beans in pretty much any dish. Whether I make them with just a bit of butter and some salt or really do them up for a holiday casserole green beans are high on my list of must have vegetables. Adding caramelized red onions definitely ups the weeknight side dish game for me.

Green Beans with Caramelized Red Onions

Ingredients:

  • 1 lb. fresh green beans
  • 1/4 large red onion, sliced thin
  • 1 tablespoon olive oil
  • Salt
  • 2 tablespoons chicken broth (you can also use vegetable broth)
  • 1 tablespoon balsamic vinegar
  • 3 teaspoons brown sugar
  • Salt and pepper to taste

Directions:

  1. Boil lightly salted water in a large saucepan and add green beans
  2. Cook for 4 – 5 minutes or until tender crisp
  3. Drain green beans and set aside
  4. Heat olive oil in skillet over medium high heat
  5. Add sliced red onions and cook, stirring frequently until the onions are caramelized
  6. Add the broth, balsamic vinegar, and brown sugar to the onions and stir to dissolve brown sugar
  7. Add green beans to the skillet and stir to coat the beans with the onions and vinegar sauce
  8. Taste and season with salt and pepper to taste
