Chicken Strombolis 2 Ways

This week for our family dinner I decided to make things a little less “formal.” By that I mean forks were optional! The grand kids are always happy with whatever I serve but this week I wanted to make it a little more fun for them by making something they could eat with their hands without getting in trouble. I thought of chicken strombolis but I couldn’t decide which one to make. So I made Chicken Strombolis 2 Ways!

Chicken Strombolis 2 Ways are a great dinner for kids because they’re easy to easy to eat with your hands.

The kids, grown up and not grown up alike, love my Italian Sausage Strombolis. And Mr. Comfortable and I think they’re great, too. But, as I told the kids, Bam cannot live by Italian Sausage alone! When they heard they were getting chicken strombolis 2 ways there were very happy to forget Italian sausage.

I had 5 pounds of chicken breasts that I sliced horizontally as the plump ends were very plump. I could have pounded them a bit to even them out but the joints in my arms said to cut them instead. Either way works. You just don’t want to overcook and dry out the thinner end waiting for the thick end to cook.

Next I cut up 1/2 a green pepper, 1 small red onion, and 1 small yellow onion into small dices. The green pepper and red onion can be mixed right away. The yellow onion is for the spicy stromboli so keep that separate.

For the Chicken Bacon Ranch Strombolis I need, of course, bacon. I cooked a pound of it in the oven while I started cooking the chicken on the stove. I only need 8 slices for the stromboli. The rest I’m saving for breakfasts this week.

When the chicken was cooked and diced into small bite size pieces I divided it for the two different strombolis. 3 cups of chicken went in one large bowl and 3 cups in another.

To the first bowl I added the green pepper, red onion mixture. I mixed it around then added 3/4 cup of ranch dressing. I stirred that so all the chicken mixture got coated with the dressing.

In the second bowl I mixed the chicken, chopped green chilies, and the yellow onion. Then I sprinkled half the cumin and garlic powder on it, stirred it, and sprinkled the rest of the spices. I stirred the chicken mixture really well to combine everything.

I preheated the oven to 400 degrees when the filling mixtures were done.

By the time I’d done all that Pete & Andi and the girls had arrived. Pete rolled out pizza dough on a lightly floured board.

We put mozzarella cheese down the center of two rectangles of dough and pepper jack cheese down the center of the other 2 dough rectangles.

If you look closely you can see the bright greens, and reds in the pepper jack cheese!

The mozzarella was topped with the ranch chicken mixture then the bacon. The chicken mix with the green chilies went on the pepper jack cheese.

We folded on long side of the dough over the filling, dampened the edge with a little water, and sealed the strombolis.

I put two strombolis on a baking sheet, seam side down, and cut a few little slits in the tops. Pete got more enthusiastic with his slits, as you can see in the picture below.

Then the strombolis went into the oven for 20 -25 minutes. The dough should be golden brown when you take them out.

I like to brush my strombolis with a little melted butter. It gives them a gorgeous sheen. But it’s totally optional.

The 8-year-old doesn’t like onions or green peppers but she ate them in her Chicken Bacon Ranch Stromboli. The 11-year-old says she doesn’t like bacon but she ate two pieces of that stromboli. And they both had a piece of the Spicy Chicken Strombolis.

I had one of each and, yes, I admit it, Mr. C and I both had a piece later in the evening! Chicken Strombolis 2 Ways were definitely a hit with everyone!

Chicken Bacon Ranch Strombolis

Ingredients:

3 cups chicken breasts, cooked and cut into small bite size pieces
8 slices bacon, cooked crisp and cut into small pieces
1/2 green pepper, diced
1 small red onion, diced
3/4 cup bottled ranch dressing
2 cans refrigerated pizza dough
3 cups mozzarella cheese, shredded, divided
1 tablespoon butter, melted, for brushing strombolis (optional)

Directions:

Preheat oven to 400 degrees.
In a large bowl mix the chicken, bacon, green pepper, and red onion.
Pour ranch dressing over all and toss to coat.
Roll pizza dough out on large, lightly floured board to form two rectangles.
Spread 1 1/2 cups cheese down the center of each dough rectangle.
Top with half the chicken mixture on each.
Fold dough over filling and dampen edges with a little water to seal.
Place, seam side down, on baking sheet.
Cut 3 small slits in the top of the strombolis.
Bake for 20 – 25 minutes, until dough is golden brown.

Spicy Chicken Strombolis

Ingredients:

3 cups chicken breasts, cooked and cut into small bite size pieces
1 (6 ounce) can chopped green chilies
1 small onion, diced small
3/4 – 1 teaspoon cumin
3/4 teaspoon garlic powder (optional)
3 cups Pepper Jack cheese, grated
2 cans refrigerated pizza dough
1 tablespoon butter, melted, for brushing strombolis (optional)

Directions:

Preheat oven to 400 degrees.
In a large bowl, mix chicken, chopped green chilies, and onion.
Add cumin and garlic powder and stir well to combine.
Roll out pizza dough on lightly floured surface to form two rectangles.
Place 1 1/2 cup cheese on each rectangle.
Top the cheese with half the chicken mixture on each dough rectangle.
Fold dough over filling, dampening one edge with a little water to help seal.
Place, seam side down, on baking sheet.
Cut 3 small slits in the top of the strombolis.
Bake for 20 – 25 minutes, until dough is golden brown.
