Busy Day Lime Vinaigrette Chicken

My days weren’t busy last week. I spent the entire week in bed. Once again the doc was less right than I’d hoped with his diagnosis and I was in a lot of pain. He now believes I have a torn muscle in my abdomen and wanted me completely quiet. But after a week of not really cooking I was losing it. So I made Busy Day Lime Vinaigrette Chicken.

Busy Day Lime Vinaigrette Chicken couldn’t be simpler to make!

Although I wasn’t busy when I decided to make this chicken I definitely wasn’t able to cook anything that required a lot of work. Busy Day Lime Vinaigrette Chicken is perfect when you’re up to your neck in other things or when you want a real meal without a lot of fuss.

I picked up a bottle of Kraft® Zesty Lime Vinaigrette dressing at the food bank. It’s not something I would have purchased if I were shopping and I almost passed on it. But I realized, while I might not want it as salad dressing it had other possibilities.

Before deciding to cook chicken in it I thought about using it just as a marinade. But I’d already thawed some chicken thighs and I thought breasts would be better for marinating in the dressing. Instead I would brown the thighs and then finish them bathed in the dressing.

Since I was unfamiliar with the flavor of this dressing I tasted a little before committing to making the Busy Day Lime Vinaigrette Chicken. But once I tried it I knew it would be something Mr. Comfortable and I would really like! It’s got a slight citrus tang to it but it’s not mouth-puckering sour. I know my grand kids will love it and I’ll bet your kids like it, too!

The super easy steps to make Busy Day Lime Vinaigrette Chicken –

First I preheated the oven to 350 degrees. Then I heated up a couple of tablespoons of olive oil in a large, non-stick skillet over medium high heat. I placed the thighs, skin side down, in the hot oil and let them cook until they were a golden brown.

While they were browning I poured a little of the Zesty Lime Vinaigrette dressing in a baking dish. When the chicken was nicely browned I placed them, skin side up, in the dish and poured some of the dressing over them.

I put the chicken in the oven and let it finish cooking. This took about 30 minutes. The internal temperature, not touching bone, was 160 degrees when I removed the dish from the oven so the chicken could rest.

It couldn’t have been easier! The skin stayed crispy and the Zesty Lime Vinaigrette had just the right zing to it.

I served my Busy Day Lime Vinaigrette Chicken with baked potatoes and corn.

It’s definitely a dish I’ll make again. And the Kraft® Zesty Lime Vinaigrette dressing is something I’ll use when I create other dishes, too. I’m so glad I didn’t walk away from this dressing!

Serving Size: 2 thighs

Busy Day Lime Vinaigrette Chicken

Busy Day Lime Vinaigrette Chicken is as delicious as it is easy to make!

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1/2 cup Kraft® Zesty Lime Vinaigrette dressing, divided

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat 2 tablespoons of olive oil in large skillet over medium high heat.
  3. Add chicken thighs, skin side down and cook until skin is crispy and golden brown.
  4. While chicken is browning pour 1/4 cup Kraft® Zesty Lime Vinaigrette in the bottom of a baking dish.
  5. Place browned chicken on dressing in baking dish and pour the remaining 1/4 cup of dressing over chicken.
  6. Bake chicken in preheated oven until internal temperature, not touching bone, is 160 degrees.
  7. Remove chicken from oven and let rest for 5 – 10 minutes; until internal temperature is 165 degrees.

    Ahhh this looks like perfection, Elizabeth! I know DJ would just love this too. The skin looks like perfection. We make something similar, but with apricot dressing!! I can’t wait to try it this way. Always love your recipes!
